Embora o a\u00e7\u00facar fa\u00e7a parte da alimenta\u00e7\u00e3o humana h\u00e1 s\u00e9culos, <strong data-start=\"652\" data-end=\"740\">a quantidade e a frequ\u00eancia com que ele \u00e9 consumido hoje s\u00e3o biologicamente in\u00e9ditas<\/strong>, com efeitos claros sobre o metabolismo, o sistema cardiovascular e a sa\u00fade a longo prazo.<\/p>\n<p data-start=\"833\" data-end=\"1070\">Neste artigo, explico de forma objetiva e baseada em evid\u00eancias <strong data-start=\"897\" data-end=\"931\">como o a\u00e7\u00facar age no organismo<\/strong>, por que ele est\u00e1 associado \u00e0 inflama\u00e7\u00e3o cr\u00f4nica e qual sua rela\u00e7\u00e3o com resist\u00eancia \u00e0 insulina, obesidade abdominal e doen\u00e7as metab\u00f3licas.<\/p>\n<hr data-start=\"1072\" data-end=\"1075\" \/>\n<h2 data-start=\"1077\" data-end=\"1125\"><span style=\"color: #0000ff;\">Quanto a\u00e7\u00facar a popula\u00e7\u00e3o consome atualmente?<\/span><\/h2>\n<p data-start=\"775\" data-end=\"1039\">Estudos populacionais mostram que o consumo m\u00e9dio de a\u00e7\u00facar adicionado ultrapassa amplamente as recomenda\u00e7\u00f5es m\u00e9dicas. Em pa\u00edses ocidentais, a ingest\u00e3o di\u00e1ria gira em torno de <strong data-start=\"951\" data-end=\"977\">60 a 70 gramas por dia<\/strong>, o equivalente a aproximadamente <strong data-start=\"1011\" data-end=\"1038\">15 a 17 colheres de ch\u00e1<\/strong>.<\/p>\n<p data-start=\"1041\" data-end=\"1270\">De acordo com a American Heart Association, os limites considerados seguros s\u00e3o de at\u00e9 <strong data-start=\"1128\" data-end=\"1152\">36 g\/dia para homens<\/strong> e <strong data-start=\"1155\" data-end=\"1181\">24 g\/dia para mulheres<\/strong>, valores frequentemente excedidos na pr\u00e1tica cl\u00ednica (AMERICAN HEART ASSOCIATION, 2009).<\/p>\n<hr data-start=\"1654\" data-end=\"1657\" \/>\n<h2 data-start=\"1659\" data-end=\"1716\"><span style=\"color: #0000ff;\">A\u00e7\u00facar e metabolismo: n\u00e3o \u00e9 s\u00f3 uma quest\u00e3o de calorias<\/span><\/h2>\n<p data-start=\"1718\" data-end=\"1925\">Um erro comum \u00e9 pensar que o a\u00e7\u00facar causa danos apenas por aumentar o consumo cal\u00f3rico. A ci\u00eancia mostra que <strong data-start=\"1827\" data-end=\"1863\">o problema vai al\u00e9m das calorias<\/strong> e envolve a forma como diferentes a\u00e7\u00facares s\u00e3o metabolizados.<\/p>\n<p data-start=\"1927\" data-end=\"2031\">Mesmo mantendo o total cal\u00f3rico di\u00e1rio semelhante, dietas ricas em a\u00e7\u00facar adicionado est\u00e3o associadas a:<\/p>\n<ul data-start=\"2032\" data-end=\"2176\">\n<li data-start=\"2032\" data-end=\"2063\">\n<p data-start=\"2034\" data-end=\"2063\">Aumento de gordura visceral<\/p>\n<\/li>\n<li data-start=\"2064\" data-end=\"2094\">\n<p data-start=\"2066\" data-end=\"2094\">Eleva\u00e7\u00e3o de triglicer\u00eddeos<\/p>\n<\/li>\n<li data-start=\"2095\" data-end=\"2121\">\n<p data-start=\"2097\" data-end=\"2121\">Resist\u00eancia \u00e0 insulina<\/p>\n<\/li>\n<li data-start=\"2122\" data-end=\"2176\">\n<p data-start=\"2124\" data-end=\"2176\">Maior risco de esteatose hep\u00e1tica (f\u00edgado gorduroso) &#8211;\u00a0 (STANHOPE, 2016).<\/p>\n<\/li>\n<\/ul>\n<p data-start=\"2178\" data-end=\"2288\">Isso ocorre porque o metabolismo do a\u00e7\u00facar, especialmente da frutose, sobrecarrega vias hep\u00e1ticas espec\u00edficas.<\/p>\n<p data-start=\"2178\" data-end=\"2288\"><img decoding=\"async\" src=\"https:\/\/www.cuf.pt\/sites\/portalcuf\/files\/styles\/max_width_1050px\/public\/media\/image\/2020-01\/infografia-acucar-excesso-o-que-faz-corpo.png?itok=GjYmUJNG\" alt=\"A\u00e7\u00facar em excesso: o que faz ao seu corpo | CUF\" \/><\/p>\n<hr data-start=\"2290\" data-end=\"2293\" \/>\n<h2 data-start=\"2295\" data-end=\"2341\"><span style=\"color: #0000ff;\">Tipos de a\u00e7\u00facar e seus efeitos no organismo<\/span><\/h2>\n<h3 data-start=\"2343\" data-end=\"2354\">Glicose<\/h3>\n<p data-start=\"2355\" data-end=\"2510\">\u00c9 a principal fonte de energia celular. Eleva a glicemia e estimula a libera\u00e7\u00e3o de insulina. Em quantidades adequadas e associada a fibras, \u00e9 bem tolerada.<\/p>\n<h3 data-start=\"2512\" data-end=\"2523\">Frutose<\/h3>\n<p data-start=\"2524\" data-end=\"2587\">Metabolizada predominantemente no f\u00edgado. Em excesso, favorece:<\/p>\n<ul data-start=\"2588\" data-end=\"2684\">\n<li data-start=\"2588\" data-end=\"2618\">\n<p data-start=\"2590\" data-end=\"2618\">Produ\u00e7\u00e3o de triglicer\u00eddeos<\/p>\n<\/li>\n<li data-start=\"2619\" data-end=\"2650\">\n<p data-start=\"2621\" data-end=\"2650\">Ac\u00famulo de gordura hep\u00e1tica<\/p>\n<\/li>\n<li data-start=\"2651\" data-end=\"2684\">\n<p data-start=\"2653\" data-end=\"2684\">Altera\u00e7\u00f5es no perfil lip\u00eddico\u00a0 (LIM et al., 2010).<\/p>\n<\/li>\n<\/ul>\n<h3 data-start=\"2686\" data-end=\"2698\">Sacarose<\/h3>\n<p data-start=\"2699\" data-end=\"2809\">O a\u00e7\u00facar de mesa tradicional, formado por <strong data-start=\"2741\" data-end=\"2762\">glicose + frutose<\/strong>. O problema n\u00e3o \u00e9 sua composi\u00e7\u00e3o isolada, mas:<\/p>\n<ul data-start=\"2810\" data-end=\"2890\">\n<li data-start=\"2810\" data-end=\"2831\">\n<p data-start=\"2812\" data-end=\"2831\">Alta concentra\u00e7\u00e3o<\/p>\n<\/li>\n<li data-start=\"2832\" data-end=\"2854\">\n<p data-start=\"2834\" data-end=\"2854\">Aus\u00eancia de fibras<\/p>\n<\/li>\n<li data-start=\"2855\" data-end=\"2890\">\n<p data-start=\"2857\" data-end=\"2890\">Facilidade de consumo excessivo<\/p>\n<\/li>\n<\/ul>\n<h3 data-start=\"2892\" data-end=\"2903\">Lactose<\/h3>\n<p data-start=\"2904\" data-end=\"3100\">A\u00e7\u00facar natural do leite. Parte da popula\u00e7\u00e3o apresenta redu\u00e7\u00e3o da produ\u00e7\u00e3o de lactase ao longo da vida, o que pode gerar sintomas gastrointestinais, mas isso n\u00e3o caracteriza intoler\u00e2ncia universal.<\/p>\n<hr data-start=\"3102\" data-end=\"3105\" \/>\n<h2 data-start=\"3107\" data-end=\"3167\"><span style=\"color: #0000ff;\">\u00cdndice glic\u00eamico e carga glic\u00eamica: conceitos importantes<\/span><\/h2>\n<p data-start=\"3169\" data-end=\"3372\">O <strong data-start=\"3171\" data-end=\"3196\">\u00edndice glic\u00eamico (IG)<\/strong> indica a velocidade com que um alimento eleva a glicemia, mas n\u00e3o considera a quantidade ingerida. Por isso, a <strong data-start=\"3308\" data-end=\"3327\">carga glic\u00eamica<\/strong> \u00e9 um par\u00e2metro mais \u00fatil na pr\u00e1tica cl\u00ednica.<\/p>\n<p data-start=\"3374\" data-end=\"3573\">Alimentos naturais, mesmo com IG mais alto, costumam ter baixa carga glic\u00eamica devido \u00e0 presen\u00e7a de fibras, \u00e1gua e micronutrientes \u2014 situa\u00e7\u00e3o muito diferente de bebidas a\u00e7ucaradas e ultraprocessados.<\/p>\n<hr data-start=\"3575\" data-end=\"3578\" \/>\n<h2 data-start=\"3580\" data-end=\"3610\"><span style=\"color: #0000ff;\">A\u00e7\u00facar e inflama\u00e7\u00e3o cr\u00f4nica:<\/span><\/h2>\n<p data-start=\"3612\" data-end=\"3805\">A inflama\u00e7\u00e3o \u00e9 um mecanismo normal do organismo. O problema surge quando ela se mant\u00e9m de forma persistente, caracterizando a <strong data-start=\"3738\" data-end=\"3774\">inflama\u00e7\u00e3o cr\u00f4nica de baixo grau<\/strong>, associada a diversas doen\u00e7as.<\/p>\n<p data-start=\"3807\" data-end=\"3867\">O consumo frequente de a\u00e7\u00facar adicionado est\u00e1 relacionado a:<\/p>\n<ul data-start=\"3868\" data-end=\"3976\">\n<li data-start=\"3868\" data-end=\"3907\">\n<p data-start=\"3870\" data-end=\"3907\">Aumento de marcadores inflamat\u00f3rios<\/p>\n<\/li>\n<li data-start=\"3908\" data-end=\"3945\">\n<p data-start=\"3910\" data-end=\"3945\">Piora da sensibilidade \u00e0 insulina<\/p>\n<\/li>\n<li data-start=\"3946\" data-end=\"3976\">\n<p data-start=\"3948\" data-end=\"3976\">Maior risco cardiovascular<\/p>\n<\/li>\n<\/ul>\n<p data-start=\"3978\" data-end=\"4104\">Esse efeito \u00e9 potencializado quando associado a sedentarismo, excesso de gordura corporal, estresse cr\u00f4nico e sono inadequado.<\/p>\n<hr data-start=\"4106\" data-end=\"4109\" \/>\n<h2 data-start=\"4111\" data-end=\"4151\"><span style=\"color: #0000ff;\">Resist\u00eancia \u00e0 insulina: o elo central:<\/span><\/h2>\n<p data-start=\"4153\" data-end=\"4273\">A resist\u00eancia \u00e0 insulina \u00e9 um dos principais mecanismos pelos quais o a\u00e7\u00facar impacta negativamente a sa\u00fade. A exposi\u00e7\u00e3o repetida pode levar \u00e0 <strong data-start=\"4713\" data-end=\"4748\">dessensibiliza\u00e7\u00e3o desse sistema<\/strong>, exigindo quantidades maiores para gerar a mesma sensa\u00e7\u00e3o de prazer.<\/p>\n<p data-start=\"4819\" data-end=\"5032\">Esse mecanismo ajuda a explicar comportamentos de compuls\u00e3o alimentar, embora o a\u00e7\u00facar <strong data-start=\"4906\" data-end=\"4942\">n\u00e3o seja classificado como droga<\/strong> do ponto de vista m\u00e9dico.
